Mazette restaurant. Originally from Paris and arriving in the Gulf of Saint-Tropez at the age of 3, Aurélie transformed an atypical path into a beautiful culinary success. PASSIONATE AND TALENTED The young woman, bubbly and dynamic, left school very early. At 19, by a turn of events, she discovered her passion for cooking while replacing an absent kitchen assistant in the kitchens of "La Mistralée" in Saint-Tropez, alongside Pascal Bouissié.
Although she did not follow the traditional culinary training path, Aurélie, surrounding herself with talented chefs, quickly climbed the ranks, going from cook to head chef.

At the age of 30, she supported, as sous-chef, chef Emmanuel Pedro Vitorino at the Café de Paris on the harbor of Saint-Tropez and learned the importance of home-made cooking. Her career led her to work in prestigious establishments, notably within the Brémond group where she had the opportunity to learn alongside Éric Fréchon. Her passion led her to take cooking classes in China, Thailand, and Italy, thus enriching her know-how.
In 2020, Aurélie moved to La Londe-les-Maures and proved herself at "Kaina Beach" in Hyères. It was there that she discovered the restaurant "Le Speakeasy", a place that immediately charmed her. After taking the position of head chef, she positioned herself to buy the establishment when it was put up for sale.
SIGNATURE DISHES In her restaurant, she offers a fusion cuisine, mixing Italian, French, and Asian influences, with "signature" dishes such as the octopus tentacle accompanied by creamy polenta and virgin sauce with pine nuts and fennel, an absolute must-try specialty. Mazette is not limited to gastronomy. The restaurant also aims to be a place for meetings and cultural exchange.
Customers can enjoy gourmet snacks such as crepes, lemon tarts, and hot chocolate, while enjoying exhibitions by local artists. Various workshops, ranging from macrame to writing, are also organized to liven up the afternoons.
In short, Mazette stands out as a must-discover place. • Interview conducted by Laurette PARAY. Photo by Philippe OLIVIER.
