He then decided to train in wine service, obtaining a Brevet Professionnel at the Lycée Hôtelier de Toulouse, which allowed him to work in a Michelin-starred restaurant. 400 REFERENCES With 15 years of experience in the restaurant industry, including 12 years in sommellerie, Fabien worked alongside great chefs (Frank Renimel, Christophe Bacquié, Sébastien Richard, Julien Le Goff or the head sommelier, Romain Ambrosi) before turning to the profession of wine merchant.
