At 53 years old, after a first career in the fashion industry where he was a retailer, product manager, and then distributor, this adoptive Valettois decided to change careers. "My previous activity was coming to an end and I felt the need to embark on something I was truly passionate about," explains Johann. Gastronomy has always played an important role in his life. Owning olive trees in Cuers, he has always been drawn to the world of restaurants and the friendliness it brings. The idea of creating a restaurant came from his neighbor, who became a friend, who had tasted these delicious dishes in Nantes. "Ramen is a dish bursting with flavors, especially the fifth flavor, umami," Johann specifies. That is how he began studying Japanese cuisine and developing a business plan for his project in Toulon, a rapidly growing city. Initially, Johann wanted to establish his concept near the Halles, but after several months of searching, he finally found a more spacious venue in the upper part of the city, catching the attention of a retired industrialist friend, Alain Tisserand, who was keen to help him. Together, they worked on setting up the project, which required discussions with restaurant professionals.

It was by meeting the Marin brothers, who run the Brasserie Grimbergen and Maison Marin Frères Traiteur, that Johann found the support he needed. Together, they collaborated to create a chic and friendly space and to build an attractive gastronomic offering, incorporating traditional Japanese recipes while respecting local requirements. Chef Masaki Kimura (Izakayo Cozza Monaco), originally from Japan, was recruited to bring his expertise. From its opening, the restaurant Tomo Tomo, "Friend-Friend in Japanese", enjoyed great success thanks to its strategic location and an original culinary offer. With 85 indoor seats and a pleasant terrace, the venue offers a variety of dishes ranging from Ramens to Donburis, as well as sharing plates typical of Izakayas, the famous Japanese bistros. These restaurateurs work with farm products, thus guaranteeing the quality of the dishes. "Respect for the producer and the origin of the products are essential to us," they emphasize. The broths, carefully prepared and simmered for several hours, are at the heart of the culinary experience. With a carefully studied value for money, Tomo Tomo positions itself as a must-visit address for lovers of Japanese cuisine. A favorite for those looking for an authentic taste experience in a setting designed and created with taste, with the contribution of the young and talented architect Poeiti Trouche.
